I’ve always been a lover of the crockpot! Probably because I hate to cook…and sadly, I’m not very good at it! It seems like the creations that come from the crockpot are always delicious and my family is more inclined to eat them. But most importantly, the quantity is large enough to give us a few meals over a couple of days.
Ever since I started The Faster Way to Fat Loss (more to come on that soon) I do some version of a crockpot meat on Sunday nights…usually chicken. Since Monday and Tuesday are my low carb days, I love having a large portion of protein thats ready to go when I get home from work but then carries me over to lunch and dinner the next day as well.

Healthy Buffalo Chicken over Sweet Potatoes
I know it sounds strange, but this combination of spicy and sweet is the PERFECT mixture. I usually layer a few slices of avocado on top and it is DIVINE. It’s also great with a white creamy sauce…preferably blue cheese if you ask me!
Healthy Buffalo Chicken Quinoa Bowl
I love quinoa! I use the Ancient Harvest gluten free quinoa and usually prep a huge batch on Wednesday. Put the buffalo chicken over quinoa with some shredded romaine lettuce, dairy free cheese, and my favorite Tessa Maes dairy free avocado ranch dressing. DIVINE!
Healthy Buffalo Chicken Nachos
This little creation is my GO TO lunchbox meal. I have become the queen of lunchbox guacamole (recipe coming soon) and this buffalo chicken is just the right flavor combo. I use Siete grain free lime chips, layer buffalo chicken, and a dollop of guac. OH. MY. GOODNESS!
